The Marmalade Factory

Jenny Rocourt

I make organic jam, jelly, lemon curd and chutney in the Burgundian village st Racho, on the Dun Mountain. Fascinated by medicinal plants, flowers and organic gardening in general, my production comes from local gardens and growers, with a spice here or there. My star product is of course orange marmalade, a family tradition as in many British households. The jam making is part of the Table du Potager.

Christophe trained as a chef in the French Alps, before travelling Europe and the USA to perfect his culinary skills.

After some years as Head chef of a Lyon restaurant, he set up his own restaurant in Lyon Croix Rousse, and was successful promoting creative cooking using only seasonal produce.

We use fresh, local produce, organic where possible, in our cooking classes. The chef is passionate about herbs, vegetables, edible flowers and mushrooms, growing many of these in his own garden.

Please join us in st Racho for a Thursday morning cookery class and introduction to French cuisine. You will be most welcome.
